MY FAVOURITE ONE-PAN TOMATO GNOCCHI
This quick and hearty gnocchi dish is a delightful, balanced addition to your family's meals. Ready in just 10 minutes, it's packed with flavour and can be easily adapted with a pinch of chilli flakes for the adults. The use of dairy-free options makes this recipe versatile for different dietary needs.

Ingredients:
2 garlic cloves, diced or crushed
1 red onion, finely diced
2 sweet red peppers, finely diced
1 tbsp olive oil
1/2 cup diced cherry tomatoes or 3 tbsp tomato purée
450 g pumpkin gnocchi (fresh; if using another type, prepare as per the package instructions and drain)
3 tbsp cream cheese (dairy-free options such as Nush chive almond cream cheese can be used)
2 tbsp grated Parmesan cheese
Instructions:
Cook Vegetables:
Heat the olive oil in a pan over medium heat. Add the garlic, red onion, and sweet peppers. Sauté for 5-6 minutes until they begin to soften.
If using fresh tomatoes, add them now. If using tomato purée, stir it in once the onions and peppers have softened.
Add Gnocchi:
Introduce the fresh gnocchi to the pan (if using pre-cooked gnocchi, ensure it's drained well before adding). Stir for an additional 3 minutes, allowing the gnocchi to become infused with the flavours of the vegetables.
Incorporate Cream Cheese:
Reduce the heat and stir in the cream cheese until it evenly coats the gnocchi and vegetables.
Serve:
Remove the pan from the heat. Sprinkle the grated Parmesan over the top for a final touch of flavour.
Serve hot, and if desired, add a pinch of chilli flakes to the portions for adults for an extra kick.
