Ingredients:
1/2 cup courgette, grated and thoroughly squeezed to remove excess juice
1/4 cup grated cheddar cheese
1/4 cup spelt flour or plain wholemeal flour
1/2 tsp baking powder
1/2 tsp mild curry powder
1 egg
1 tsp coconut oil or olive oil, for cooking
Instructions:
Prepare Courgette:
Start by grating the courgette and then squeeze out all the excess liquid using a clean cloth or kitchen paper. This step is crucial to prevent soggy bites.
Mix Ingredients:
In a mixing bowl, combine the grated courgette, grated cheddar, flour, baking powder, curry powder, and egg. Mix well until all components are evenly distributed and the mixture holds together.
Cook the Bites:
Heat the oil in a frying pan over medium heat. Once the oil is warm, spoon a tablespoon of the mixture into the pan for each bite.
Cook each bite for 2 minutes on one side, then flip and cook for another 2 minutes on the other side until golden brown. Depending on the size of your frying pan, you can cook a few bites at a time.
Monitor and Serve:
