SUMMER FRUIT TRAYBAKE

Ingredients:
120 g butter, softened
120 g caster sugar or coconut sugar
2 eggs, beaten
120 g self-raising flour (wholemeal preferred)
1.5 tsp baking powder
1 tbsp chia seeds (optional)
1 apple, finely sliced
1 fig, diced
A handful of raspberries
1 banana, mashed
2 tbsp mango, diced
Instructions:
Prepare the Mixture:
In a mixing bowl, cream together the butter and sugar until smooth and well combined.
Add Eggs and Dry Ingredients:
Gradually add the beaten eggs to the butter mixture, ensuring each addition is fully incorporated before adding more. Once smooth, stir in the flour and baking powder.
Incorporate Fruits and Seeds:
Mix in the chia seeds, if using. Then, gently fold in the sliced apple, diced fig, raspberries, mashed banana, and diced mango until evenly distributed through the mixture.
Prepare for Baking:
Line a baking tray with baking paper. The tray should be sized to make around 9 smallish squares. Pour the mixture into the tray, spreading it evenly.
Bake:
Preheat the oven to 170°C. Bake the mixture for 50 minutes, or until the traybake is firm to the touch and a knife inserted into the centre comes out clean. The centre should spring back when pressed.
Cool and Serve:
Allow the traybake to cool in the pan before slicing it into pieces. This makes it easier to handle and ensures clean cuts.
