CHEWY GRANOLA COOKIES
These delightful granola-style cookies are inspired by one of my favourite combinations: apricot and coconut. By incorporating chia seeds, abundant oats, and substituting refined sugars with a blend of coconut sugar and honey, we've created a treat that's both delicious and nutritious. Packed with whole ingredients that offer a good balance of protein, carbs, and fats, these cookies are perfect for a convenient on-the-go snack or a fun baking project with kids.

Ingredients
125g Plain Flour
1 tsp Ground Cinnamon
1/2 tsp Bicarbonate of Soda
160g Rolled Oats
110g Butter, softened
100g Coconut Sugar
80g Honey
1 Egg
1 tsp Vanilla Extract
A handful of Raisins
A handful of Chopped Dried Apricot
A handful of Desiccated Coconut
1 tbsp Chia Seeds
Instructions
Prepare the Dry Mixture: In a bowl, mix together the flour, cinnamon, bicarbonate of soda, and oats. Set this aside.
Prepare the Wet Mixture: In a separate bowl, whisk the butter, coconut sugar, honey, vanilla extract, and egg until smooth.
Combine: Fold the dry mixture into the wet mixture until just combined. Stir in the chia seeds, raisins, chopped dried apricot, and desiccated coconut.
Chill: Refrigerate the dough for 30 minutes. You can either leave it in the bowl or shape it into a log and wrap it in cling film for easier handling.
Shape and Bake: Form the chilled dough into 12 equal-sized cookies. Place on a baking sheet and bake in a preheated oven at 180°C (356°F) for 12 to 15 minutes, depending on your preference for chewiness or crispiness.
Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
