SWEETCORN, CARROT AND PEPPER FRITTERS
These super easy-to-make vegetable fritters are delicious, colourful, and perfect as a snack or a vibrant addition to any main meal. Packed with vegetables and a hint of optional cumin for an extra flavour kick, they're a hit for all ages.

Servings: 10 fritters
Ingredients:
2 eggs
50 g spelt flour, plain flour, or wholemeal flour
1 tbsp milk (dairy-free alternatives can be used)
A handful of sweetcorn, drained
1/2 a sweet red pepper, finely diced
1/2 a carrot, either steamed and diced or finely grated
Optional: 1/2 tsp ground cumin
Instructions:
Prepare the Batter:
In a mixing bowl, whisk together the flour, milk, and eggs until smooth.
Add the Vegetables:
Stir in the carrot, red pepper, and sweetcorn into the batter. Mix well to ensure even distribution of the vegetables. If using, add the cumin now for a hint of spice.
Cook the Fritters:
Heat some vegetable oil in a frying pan over medium heat.
Drop a spoonful of the mixture into the pan. Cook for 2 minutes, then turn the fritters over and cook for another 2 minutes, or until golden brown on both sides. Adjust the heat if they brown too quickly.
Depending on the size of your pan, you can cook a few fritters at a time.
Repeat and Serve:
Continue cooking in batches until all the mixture is used up.
Let the fritters cool slightly before serving.
