SWEETCORN, CARROT AND PEPPER FRITTERS

These super easy-to-make vegetable fritters are delicious, colourful, and perfect as a snack or a vibrant addition to any main meal. Packed with vegetables and a hint of optional cumin for an extra flavour kick, they're a hit for all ages.

  • Preparation Time: 10 minutes

  • Cooking Time: 4 minutes per batch

  • Total Time: Approximately 30 minutes, depending on batch size

  • Servings: 10 fritters

Ingredients:

  • 2 eggs

  • 50 g spelt flour, plain flour, or wholemeal flour

  • 1 tbsp milk (dairy-free alternatives can be used)

  • A handful of sweetcorn, drained

  • 1/2 a sweet red pepper, finely diced

  • 1/2 a carrot, either steamed and diced or finely grated

  • Optional: 1/2 tsp ground cumin

Instructions:

  1. Prepare the Batter:

    • In a mixing bowl, whisk together the flour, milk, and eggs until smooth.

  2. Add the Vegetables:

    • Stir in the carrot, red pepper, and sweetcorn into the batter. Mix well to ensure even distribution of the vegetables. If using, add the cumin now for a hint of spice.

  3. Cook the Fritters:

    • Heat some vegetable oil in a frying pan over medium heat.

    • Drop a spoonful of the mixture into the pan. Cook for 2 minutes, then turn the fritters over and cook for another 2 minutes, or until golden brown on both sides. Adjust the heat if they brown too quickly.

    • Depending on the size of your pan, you can cook a few fritters at a time.

  4. Repeat and Serve:

    • Continue cooking in batches until all the mixture is used up.

    • Let the fritters cool slightly before serving.
